Long story short, for Mother's Day my mom requested some smoked chicken, so got a whole batch of thighs and breasts going however looks like they're gonna be done before her flight lands. Can I just throw em in the oven covered in a foil pan at 180 and call it good? Too high/low? Will post up some finished results as I was too rushed getting them in.

It all depends on how much time you have between when they get done and when you plan to eat. If it's only an hour I would say go for it. If it's going to be longer, then I would just refrigerate and reheat for about 20 or so minutes before you're ready to eat.
