Kassler and Spatzle

    Grilled Kassler and Spatzle last night on the Weber Genesis.

    Brought to room temperature, sprinkle Hungarian Paprika and lightly brush in oil (Peanut in my case). Simple and wonderful.

    Grill preheated and stabilized at medium. Quick sear both sides and it's done!

    Spatzle is store bought Farmers noodle style, cooked el dente, sauce is butter garlic and paprika, simple and delicious.

    Looks great. Nice thick cut. I've not seen Spatzle premade in the stores...JJ

    JJ - I've found the pre-made Spatzle in European stores and also the Pasta/European sections for grocery stores up here in Canada.

    Chops were 1-1/4" thick. Beautiful cure and smoke on them, perfect salt content. They were purchased from a boutique meat store called Paradise Farms in Erin Ontario.

    Thanks. Cured and smoked Chops are easy to do, especially if you Brine cure them. Search Pops Brine for info on getting them done...JJ
