Hi all. I swapped one OZ for another. I am living down in Coffs Harbour, but KC will always be home. Grew up eating Hayward's and my favourite, Jack Stacks. Down in Australia, low and slow hasn't caught on commercially much so it's left up to the few to smoke our own. I am currently smoking on a bullet style smoker and it is a hunk of junk. It works with some struggle and tinkering. I am in the process of upgrading from that to a ProQ or an offset in the next few months, but looking for some advice as to which way I go. I would love to get into markets eventually and test the market a bit. That is a ways off though. I need to get my consistency down. I look forward to reading on here for some great advice and tips.

I think you will experience more stable temps from a commercial vertical compared to most off sets to start with, off sets just take longer to learn in my opinion.
 
Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

Welcome to the forums!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  When you can't find the answer you're looking for, just ask and someone here will have the answer.
