Hey everyone,

My name is Scott and I livein Alabama. Just real quick I have a New Braunsfel grill with a firebox. Definitely a newbie when it comes to smoking meat. I've tried several times (turkey breast, pork tenderloin, picnic), but not real happy with outcome. To me, the meat tastes like it's got lighter fluid on it. My lovely bride says it's wonderful!

Love some advice with it......

Welcome to SMF! I ASSUME yer not using lighter fluid to light the charcoal are ya? No No there... get a charcoal chimney. And use LUMP <natural> charcoal.

Second thing...might be a creosote issue. What's yer smoke look like? Should be almost invisible..Thin Blue Smoke is what ya want...

Good luck with your new beginnings in the smoking department. Follow the leads you find here and things will get good.
 
It will take some time to get thing right. Who am I fooling it is luck every time but. Buy a chimny starter to light the coal. Don't even buy that pre soaked junk. Keep your smoke blue and your temps low. You don't want big smoke, lite smoke. I had to learn the hard way. I use chunks, not logs. I have a smaller smoker.
