I haven't had a chance to do too much smoking and/or posting. This work thing just gets in the way or everything. Gotta do something about that. Come on Lotto!
I picked up a couple racks and SLC ribs and the wife likes cornish game hens (baby chickens) and I picked up a small pack of legs to do some chicken Lolly pops.
Sorry no prep pics. Did everything on my UDS using KBB and Oak Fruitawood that I forgot that I had. I need to order some more. This stuff is so much better that the box store stuff. I had been using some off the shelf stuff from the grocery and it seemed like I was having to put too much wood to get a good smoke flavor using my UDS. Not so with the Fruitawood. Lots of good flavor.
Did the ribs low at 225* for about 3.5-4 hours. They were cheap big box grocery story variety. But the were cheap. When I peeked in on them at 90 mins I could feel the steam and there was no water pan. Man there was a lot of liquid added to that meat.
I wrapped a few of the legs in bacon. I had jacked up the heat to 325* when I put on the bird. The ribs got about 30 mins of that higher temp and helped em bark up and darken a tad.

Did one of my favorites, a BLT salad. There are more tomatoes one the bottom. I render a bunch of bacon and use the drippings to make the croutons. Drizzle the fat all over cubed up bread and into the oven for a while. Yum. Toss the lettuce, bacon, tomatoes and croutons in your favorite dressing. I usually make my dressings. This one was sort of a creamy Italian style; garlic, mayo, olive oil, onion lemon juice and some seasoning salt. Pop in the bullet mixer. adjust to taste. Those green lumps are avocados.
