Hi folks,

by sheer coincidence I'm echoing Razorback 1 below - Call Arkansas home, moved to Minnesota and then back down to middle-of-nowhere lower Alabama. Missed out on the Razorback 1 handle "by THAT much Chief" :D. I'm retired USAF and have a couple of years of smoking experience with a series of small offset smokers (it's just me and the wife - my son's off at school) which are just right for our needs.

I work out of my home so I'm able to keep tabs on my smoker since I'm an all wood or charcoal type and have gotten pretty good with all of the basics. What I'm really looking to get better at is sausage making and smoking as well as cold smoking fish. I'm really looking forward to interacting with the folks on this site to learn new techniques and get advice from the "Old Timers". My expertise is in international grilling / cooking (Asian is my favorite followed by Central American and Middle Eastern / Mediterranean. If anybody is looking for any advise in those regional cuisines maybe I can help!

I look forward to 'virtually meeting you all!
