Hi all!

I just picked up a big ceramic smoker. I've been using offset smokers for quite some time. After some research, I decided that Ceramic was the way to go for me. I hope I made the right decision- this thing was pricey! I grilled some t-bones last night (sorry no pics...) and they were delicious. Pork shoulder is in the fridge brining now and will put it on tonight and smoke overnight.

Welcome to SMF Steve!  There are lots of folks here with Big Green Eggs and Kamado style ceramics so any question you might have will find an answer.

Looking forward to seeing pics of the shoulder!

Why brand did you get? I love mine, I have a Primo XL. I think you'll be surprised at how well it holds temp. and how hot you can get it. They are great for homemade pizza too. Looking forward to seeing pics of your cooks!

I do ceramic smoking as well.  I like the no-fuss, no firebox tending 16 hour cooks on it.  I use a Kamado Joe Big Joe (1100 square inches of surface with all the racks in) for large cooks, and a Joe Junior (143 square inches of surface on a single grate) for small items, like a single pork shoulder, or two racks of ribs.  I sold off my Akorn last night to a fellow smoker, and am picking up an older Kamado #7, which needs rebuilt.

Picture of two racks of ribs (cut into 4 half-racks) on the Junior:

Two monster beef racks on the Big Joe.

Got a Kamado Joe- Big Joe

The first seared steaks were awesome. Currently in my first pork shoulder smoke. I love this thing!

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

If you will start a new thread in the pork section everyone will get a chance to fallow along.

I like my BGE.
Happy smoken.
