I just have my first smoker, a 30" MES. I am 75 years young and have as other hobbies, no-knead bread making, scrollsawing and photography. I used to play golf and trail-ride, but arthritis and a hip replacement have curtailed that activity quite severely. I am looking forward to learning the art of "smoking" and can see that this site will help me to that end. Thanks, Dale

Hi Dale!
I'm a newbie to the forums and I just can't believe how helpful everyone has been! I'm a professional photographer so if I can help you with that please send me a private message. I took up golf about a year ago, any advice for a left-handed beginner?

I am also in to to bread baking, I made Brioche today, yummy! I have the no knead books, but I love Peter Rhinehart.

Welcome to the forum. There are lots of good folks here, just waiting to help out with your new found hobby.

Thanks everyone for making me feel so at home. I can see that I will be able to learn so much, so fast, compared to what it would be like without this kind of help. Dale

Welcome To Your New Addiction

I stopped into Cabelas to buy a fishing vest and walked out with a new MBS 30"er. I told my wife it was a Mother's Day present, but it actuall was a present to myself. I had bought her a gift already so I was off the hook.
After assembling the smoker I fired her up to break her in per the instructions. So far that's the only smoking the beat has done.
I promised my wife I smoke something this weekend. Planning on doing up some ribs. Anybody have any suggestions as to a rub recipe to break in this bad boy?
