Smoked Meatloaf

Preparing to smoke a meatloaf... Everyone says these are da'bomb.
Looking forward to a whole new flavor factor in meatloaf for my family to enjoy. Thumbs Up

3.34# 80/20 ground beef
2# Italian style ground pork sausage
2C Italian style bread crumbs
5 eggs, lightly beaten
3C chopped Bell Peppers
1C chopped Sweet Onion
2t minced garlic
1T Sea salt
1T Smoked Paprika
1.5T L&P Worcestershire sauce

Combine all ingredients and mix well
Shape into loaf and wrap with bacon
Smoke at 250' till 160' internal temp

Yours has a much more pronounced smoke ring than the one I tried that was wrapped in bacon.

I did a bacon lattice that went around and semi overlapped.

I will have to try it like you did with less bacon and use a few toothpicks so more smoke will make it to the meat.

Looks delicious.

My reasoning for the toothpicks was to keep the un-tucked ends of the bacon from curling up.
I will say, next time I'm cutting the bread crumbs by .5C to only 2C.
 
Nice meatloaf!  I haven't wrapped one in bacon, that has got to be da-bomb!
