Hello all:

I can't find decent brisket anymore around where i live. I have checked Sam's club and Walmart, Food lion etc. no one carries whole packers, we got a new Publix about 6 months ago so i checked out what they have. talked to the meat manager he showed me the "whole" briskets they had. What they had was a brisket with 90% of the fat trimmed off and little bit of point and 3/4 of the flat. So i bought the biggest one they had.and i smoked it. It tasted great but didn't have the fat content i wanted. here is how it came out...

No trimming on my part this is how it came out of the package..

I covered in Worcestershire and black pepper 


I put it on Black Betty at 250 degrees...


Pulled the Brisket at 202.3 degrees from the smoker about 5 and half hours


Let it rest for about 2 hours or so wrapped in aluminum foil


 Sliced it across the grain..tender and juicy but was a bit different with all the trimming


 We had brisket for Dinner Saturday night and everyone loved it!

Brisket looks good to me. Do you have a Restaurant Depot anywhere near you? They have whole packer briskets. If you do and you don't have a tax ID number you can join the KCBS and get a day pass every time you go.

That's odd... I can get full packers at Sams and wally world here in Raleigh. Sams packers can be massive where wally worlds packers are a bit on the smaller side but still full and with a good fat cap

See what he did? He saved those pics from Saturday and put them out when he figured we wouldn't have anything else good to look at on a Tuesday. So we would all have a full load of points to give out. What a trick!
