My name is James, I live to the west of DC in Va.

I only know how to make three things in life (breakfast burritos, beef vindaloo, fish in foil) so somehow I have decided I want to be a great bbq'r since my wife and I love ribs and pulled pork. I own a Charbroil infrared gas grill but she uses it way more than me.

Since my birthday and my first ever father's day as a father have collided, my wife said I could quit watching BBQ Pitmaster marathons on TV and actually buy a Big Green Egg and try it myself.

So this week, I have conned my father into making the drive up from Texas and he and I are going to dive into the world of smoking.

He was a Mess Sargent in the National Guard for years, and cooks by camp fire often. He enjoys a brisket and sells grills of all types because he works in a hardware store. He is the one that said I should get a Big Green Egg. One of my best running buddies is an ex-pig farmer. He's in this adventure too. We want to spend this summer perfecting our bbq so next summer we can start letting people try it without being worried about quality.

Always want advice!
