Made up some Juicy Lucy's yesterday.  You can do a lot with those and that's the great thing about them.  I was at my granddaughters birthday party and made up some burgers for the guests.  Some wanted just a regular style burger, some with add-ons and for guy's like me who like a good burger, chose the Juicy Lucy.  We had tomatoes, ketchup, mustard, lettuce and all the usual stuff but I wanted to fry up some onions, jalapenos, and bacon also.  Here is what I did on the Lucy's: Reinhard

Sliced up some onions, jalapenos, and as you can see, the bacon was fried first, with the first batch on the paper towels.  I like frying the vegies in the bacon grease.  I dump out most of the grease but leave just enough to give the vegies some love.

Onions are done.

Bacon pile is getting bigger.

I just take the seeds out of the peppers and cut them in half for frying.  Just get them done enough so they tender up some.

Made the patty thinner , and put some onions, peppers, bacon, and pepper jack cheese in the center.

Slapped another patty over it all and sealed the sides.

Here she is and pretty much ready for extra cheese on top.

Couple of slices of pepper jack cheese went on top for a good melt.

Put just a little ketchup on the bottom bun, put the Lucy on it and topped it off with more bacon, onions, and jalapeno peppers.

A real handfull!!!  Here it is cut in half.  Cheese melting on the inside and from the top.

Thanks everyone.  Ya that was one big burger.  Yesterday I made a beer can burger which I will post next.  That one will be one I will make more often.  Just like a Lucy but no second pattie.  Reinhard

That looks incredible! I am definitely saving this recipe for later. In fact I think I'm going to thaw some ground beef as we speak. Fantastic job!

One question...that's a lot of jalapeños. Does frying them a bit take some heat out. I like got, but that looks pretty hardcore.

Yes, cooking the peppers takes some of the heat out.  Scrape the seeds out and fry till tender.  My wife is not much on heat and said they were just right for her. I fried up a bunch because I had 20 or so folks to feed.  Not everyone wants peppers but they all went.  Reinhard
