Having a slight issue with my beef jerky. I have been smoking it for the past seven hours but the humidity outside is just too high. Will it eventually dry out enough or do I need to reduce the humidity inside the MES somehow?
If you are using the MES at the 100 to 120 degree setting, you are already decreasing the humidity.
Normally I smoke a couple a hours then in the humidifier for about 20+ on a low setting.
It takes awhile for me to be happy with my jerky, its like smoking, its low and slow and you just can't rush perfection.
Did you dry the jerky before smoking with paper towels? Did you do a de-water cycle? Did you leave it uncovered in the reefer overnight or even more before attempting to smoke? These all help decrease the drying time.
I only have the MES, no dehydrator or humidifiers. I did not dry it off before I out it in. I didn't see that in the recipe I followed. I did let it cure for 2 days. As far as the De-water, never heard of the term. I am going to keep it in there until it dries. I figure it had to at some point. Hopefully time heels all wounds.
