I'm pretty new to this whole smoking thing, but have made deer for the last 10 years or so on my dehydrator.  After buying a smoker this  summer, I'm thinking why not the smoker??

Anybody else do this?

If so, what temp?

How long?

Thank you

Alot of people do.

Use the search function. Works great.

Have done it for yrs and have always just made sure to sort of cold smoke to start and then bring up the heat at the end, I always tend to keep mine chewy and not hard as some do, just keep it in the freezer.

absolutely it can be done and is done all the time. I use a combination of smoke and heat. I like just a little smoke flavor so I would let it smoke for the first 1 1/2 and then turn on the heat and let it dry without the smoke the remainder of the drying time. Which was usually about 3 hours as long as it was all sliced consistently at about 1/8 - 1/4 inch thick.
