Jerk Wings ~ Mini WSM

    So my wife requested chicken wings today. I personally like hot wings and she likes the sweet and spicy wings. Normally I will do chicken wings on the Weber Q, but today she requested that her batch be smoked.
    I began by marinating the wings overnight in her favorite Jamaican jerk marinade. Then I prepared the mini with two small chunks of Apple. I set the mini to 225° - 250° and let them smoke for two hours. After that, I fired up the Weber Q and crisped them for about a minute on each side.
    I did try one as my wife immediately complained that it was not the chicken wing that she normally likes. The flavor was there, but the skin was not as crispy as she's used to. It was a great experiment, but from now on I will do them on my Weber Q.

    Looks great to me! I'm all about the jerk! I'm waiting for wings to go on sale again. once they do I'm going to load up both racks of the mini - half for the wife and "those people" and the other half like they're meant to be - hotter the better!

    Ryan, them wings look tasty to me ! I usually crank the mini to 350+ & crisp up the wings... Sometimes I'll remove the pot & put the grate down on the bottom section & it works pretty good too ! Just a few suggestions to consider, but I know the Weber Q is a nice unit also !

    I'd be all over those wings!

    Maybe next time try and take the tamale pot off and finish on the smokey joe...

    Thanks guys. Don't get me wrong, they were certainly edible, they were just not what Mrs. Murray was used to.

    Tasty looking wings!

    I run my mini 350-400 when doing chicken. Yes you do get the sole flavor SMF you do get crispy skin. Now if your wife is looking for typical bar style crispy hot wings, you should smoke them slow and cold ( 170-180 pit temp) then either high temp grill or dep fry after. Some of the best wings I've had were injected Scarbelly style, cold smoked then deep fried!

    Thanks guys. They tasted just fine. They just weren't what Mrs. Murray was used to.
