Hi y'all I am from omaha nebraska where the feather bones are plentiful. Which is my favorite to smoke. Like many i started on the E.C.B wich i love. I also have an offset made by chargriller that i struggle with every time even after the mods.

Welcome to SMF JDSmokehouse. This is just the place to get that off set smoker perfected. Plenty of knowledge round hear. I am a beginner and use a MB 30 inch propane smoker. Make sure you learn how to post pics as we all LOVE pics around here.

JD go to the search bar at top of the page and type in how to post pics. There are some instructions that will make it easy to follow. But the short and sweet is when typing a reply or beginning a new thread there is some tool bars at the top one has a smiley face in it. The first icon in this is the icon you click on to upload a pic. Then just click on a pic and hit submit. and you are Q viewing.

Welcome aboard!  Glad you've joined our group.  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  You'll find there are lots of friendly and knowledgeable folks here who genuinely enjoy helping one another.  Looking forward to your input, and just ask when you need anything...someone here will surely have the answer.
