Using a Brinkman here in SC. Followed the smoked turkey recipe to the t from Jeff and was the heroe of thanksgiving...  I don't experiment too much yet but have mastered (according to my family) chicken and ribs.  My dad was given 3 wild ducks and he wants me to smoke them for him.  They are dressed and two look to be mallards(according to my dad) and the other is pretty small.  Any ideas on how to proceed?

Welcome to SMF Cannon!

Glad to have you with us!

Smoke the ducks just like you did the chickens.

If you didn't brine the chickens I would brine the ducks.

I had great success yesterday with some deer roast I've had frozen for a few weeks.  Just some rub and a few pieces of cheap bacon on top.  My in-laws ate it like I was slicing them a very expensive cut of beef....  Funny how the secrets seem to be so simple...  I'll take the e-course since it's been suggested by multiple folks.  The midlands of South Carolina are enjoying smoked meet this holiday season.  Ducks for smoking on Monday.  Thanks to all.
