One of my favorite things to eat with deer meat is jalapeno and cheese summer sausage. Before I always had it processed but I've been wanting to make my own. I was wondering what kind of jalapenos are best to use? Fresh jalapenos, pickled jalapenos, dehydrated Jalapenos? My first attempt I used fresh and I didn't like the way it turned out. The jalapeno almost had a crunch to it. Just looking for any help or tips on what kind people like to use and process they use to get them ready ( I wonder if I should of blanched the jalapenos).
 
I use fresh in the summer sausage and fresh sausage . If you don't like the texture you could soften them in more than one way . Maybe you had to much added in ?
 
I have made it with fresh jalapenos .. chopped up and put in a bowl and just heat in microwave till just "off crunchy" ... made some one time when my brother in Anaheim, sent me a box of Anaheim reds ... was way toooooo hot .. lol
