My concern with the hot ash specifically, falling onto a thin metal like that in the Brinkmann? I would think the smoker wouldn't hold up too well to that in the longrun.
 
Well, here's the qview on the butt. It was about 7.5 lbs bone in, that is until I pulled it out after 12hrs on the smoker and an hour in the oven at 300. I was finally able to stabilize that 190deg internal temp. Really glad I did. Turned out waay better than my first attempt.
