Italian Pepper Sausage and some Deep Fried Sausage Balls....

I have been making this simple sausage for a long time and it allows me to use some of my de-hydrated peppers




5 pounds fresh pork butt.................2 teaspoons fennel seed
2 tablespoons seasoned salt............ 1/2 teaspoon powdered bay leaf
2 tablespoons crushed red pepper.....1/4 teaspoon ground tyme
1 tablespoon granulated garlic...........1/4 teaspoon ground corriander
1 Tablespoon granulated onion..............2 teaspoons chipotle powder
1 tablespoon black pepper.................
1 tablespoon paprika

I use my paprika,my crushed red pepper(ALCALDE) and my chipotles.



This 7 pound butt was frozen 2 months,I thawed to point you would normaly freeze the chunks for better grinding

I cut it down to 5 pounds






I love to sear,then rub and cook at 350 degree for 4 minutes a side these 1 pound butt steaks for a later meal-delicious







Still do not have a dedicated grinder or stuffer after years and years of this.That will change by christmas-maybe.

My kitchen-aide grinder-done great for years







Added the spices..Let it sit overnight










I just make loaves for breakfast sausage,pizzas,spagetti sauce sausage etc....And mostly freeze what i do not need.Last me a month...






Made some sausage balls to deep fry....Some pepper jack cheese in the middle...






Simple flour,egg and bread crumb batter






6 minutes at 350 degree







Man they are good and fresh






For dinner i took a bottom of round and cut against grain in thin slices the entire round for 1 minute steaks.I freeze most and eat as needed







Seasoned in flour salt/pepper and cook quick....Great beef flavor and i did add some of my chipotle for a kick

And of course the chipotle, you know as soon as you break that stuff out the meal can only get even better

wait......you take god's greatest gift in meat and you season it......stuff it with cheese.....bread it......and then fry it into a crispity-crunchity ball of goodness???

Now that is a differant version of moink balls for sure there alex. I do like the pork steaks. We grill them all the time here with just a litle seasonings there are the bomb. I'm not touching the dude and your steak thats just wrong. Quickly turn the page.

Perfect little balls of deliciousness Alex, great job. Been askng Santa for a grinder meself for a couple years now and that fat dude just ignores me. I'm going to put ex-lax in his brownies this Christmas!

Nice food you made there, and that side discussion on that weird guy is worthy on its own. Ballet or no, I would have flipped the sheet over and put up some Bali intimate wear pics instead
