First time smoking sausages.....Not bad if I do say so myself!! I used my Brinkmann Pitmaster Deluxe (bday present, thanks mom!!) I've only had it for about 3 weeks now. I kept the temp around 240-245 for 1 1/2 hr and used apple and maple chunks. The first 45 min, I used the apple and the second half used the maple. I also used a water pan but I used bud light instead of water (not sure if the beer/liquid was needed but why not.) After the smoking was done, I added the meat in with the onions and peppers that were fryin up on the stove. Try it and see what you think, let me know.
