I think I like to load my Smoker to busting..

I made an Italian Fattay in addition to the Pork butt and shoulder and 2 racks of baby backs.. already on the smoke... this is how it happened..

1) stay up late and plan the smoke under the influance..
2) think the afore-mentioned plan was a good idea..
3) commit
4) follow thru...

this is what it is..

1lb Jimmy italian chub
hormel turkey Pep
Swiss
Hormel black center cut bacon..
Spinich?

YUM!

SO thats one of the Shoulders still unwrapped the bone in one behind wrapped and one of the Thai Black Ribs in the Foreground AND our Italian Fattay in the back getting some heat!

Another great smoke from ya Heliboy!
Fattie looked great. Ben may enjoy anything with swiss but you had me with the spinach. Love it!
