Well smoked my first fatty today along with some more 3-2-1 spare ribs, both came out excellent. I stuffed the fatty with Boscoli olive salad and feta cheese and it came out great. All ready decided my next fatty with be of a jambalya(sp) flavor. I also did 3 racks of spare ribs, trimmed them up before putting them on and gonna use that for pull pork samwichs. It was also the first time I used Jeff's rib rub which is awesome.
