Got a master built electric smoker..have issues keeping the mold away while not in use...obvious answer is use it more (lol) but looking for some way not to have to completely cleani the unit before use everytime...
 
Mine doesn't sit long enough to be a problem but I would think just wipe out any wet food residue and grease/drippings and then heat it up high as it will go, for an hour or so with a little smoke.  I would not use a water pan during the clean heat, point would be to remove the moisture that is encouraging mold growth.

Sorry , had to... Bleach 1:10water for mold cure...
 
Sugars and sauce cause heavy mold. best thing is to remove and clean all racks and pans after each cook.
