It's been a long time since I blew the dust off the WSM. Between the sudden death of my dad in January and the unforgiving work load that left behind there's been very little time to make smoke.

I figured I would give myself a long weekend for the 4th and just relax for a day or two. So let's start the show...

8# brisket flat

Heavy SPOG

Went in around 7am today...

And... the finished product around 700pm.


Wrapped in foil and towels while I went to watch some local dirt track racing.

Got home around midnight and grabbed the knife. Wow.... this is goooood!

If Aaron Franklin is ever in PA and he wants to see how we cook brisket, he's more than welcome to come on by! Lol!!
 
Tim your brisket looks great!  Sorry to hear about your father, the first year is very hard but it gets easier after that.  Enjoy the 4th!
