Is my brisket stall taking too long?

Discussion in 'Beef' started by idsmokethat, Jul 11, 2015.

  1. Today is my first time ever smoking.  I have a brisket in that is now going on hour 6.  It's been stalled between 145-150 for about 1.5 hours.  Is this okay?  I'm in no hurry, so I didn't want to disturb it too much.  I'm using an iGrill2 to keep my temperature...

    Thanks in advance!

Yes that's normal. I've had them stall out for a couple of hours

Nothing at all to worry about.

Watch it close, sometimes after a long stall, they take off.

Show us how it turns out!

  4. Thanks!  Do you think I should cover it with foil or still wait until it hits 165?

Up to you. I sometimes foil and sometimes don't. Depends upon the amount of Crown and time! LOL

the temp you are smoking at will effect the stall, and when your meat gets closer to your smokers temp it slows as well especially with larger cuts. Got any pics?
