Is it possible you think to get 2 pork butts at the same temp at 155 set to 200 set in 3 hours? They've been on 10 hours 6-7 lbrs
 
Sure it's possible:

The 7 pounder in my Step by Step went from 165° to 203° in 2 1/2 hours using a smoker temp of 260°. That was foiled for those 2 1/2 hours.

Having a hard time keeping a steady smoker temp all day with humid air and no breeze. I need to do some mods to my brinkman trailmaster le also to keep from leakage
 
I foiled and got to temp within 2 hours. Everything turned out great. The money muscle was awesome. Really like doing the money muscle and won't do it without from now on. It's like the burnt ends of pork butts. Here's some pics of it shredded, the money muscle got devoured..

Here's another little tip on how I get my charcoal going that works great. A basket from rural king or anywhere with a BBQ section cooking section like Walmart or anywhere. Put your charcoal in there and put it on your side burner on gas grill. Who uses that burner anyways lol
