Bearcarver mentioned that I should post here and introduce myself. I am probably not in the right place but here goes. I am a geologist, father of six girls, married 27 years to a wonderful Wisconson dairy girl, live in Utah, enjoy the outdoors, and cook meat. I duch oven, grill, and now smoke meat. I have been smoking for 1 1/2 years and am getting quite confident. I received my retro fit for my 30" and I plan to upgrade to the 40" stainless or a Cabelas pro model someday: maybe in 5 years or so. I just smoked a turkey Tuesday night (just great). I am smoking salmon tomorrow at the wishes of my family.
