Hello all.  My name is David and I am a new member living in Katy, Texas.  I just purchased a MES 30 (digital).  I used the web site prior to joining to perform my research and make my purchase decision (this site has already proven helpful).  I'm am in the process of seasoning my new smoker and will probably throw some ribs on tonight just to get going. 

I love cooking all types of foods and can't wait to add my smoker to the mix. I'm looking to learn how to smoke traditional meats as well as non-traditional food such as shrimp, burgers, pizza, etc..  I've seen a lot of interesting recipes thus far, have registered for the newsletter and continue to learn the site to try and develop an approach for learning  the fundamentals of smoking along with how to most effectively use the type of smoker I have.

Thanks for allowing me to be a part of this community.  I look forward to learning many things and meeting lots of good people along the way.  I hope to eventually be able to help people as much as I am sure I will be helped.  Any guidance on where to start is greatly appreciated.  I will probably use the smoker recipe for ribs that came in my owner's manual.  This will give me time to locate the recipe for my next adventure tomorrow.

Well burgers, shrimp, pizza are not non-tradional foods on this forum!  That stuff is easy and we enjoy doing it pretty often.   You may consider a pre-cooked ham, meatloaf, sausages anything like that is very simple and a good way to get familiar with your smoker.

 I have the MES 40" . The unit really doesn't get hot enough to cook pizza. i smoke all the ingrediants and make the pizza and cook in oven.

 MES does a good job on low and slow smoking .

Heh David, Welcome to the SMF !  You will find a ton of information and a great support group for all of your smoking & cooking endeavors. 

I used to live in Katy back in the late 70's before moving to New Braunfels, Tx. If you ever get this way give us a shout .

PS: try a nice 5 pound roast in your smoker. You will love it !

First off welcome to SMF there David. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
