Hellow forum, im from Upstate NY Fulton to be exact, and have played around with smoking and sausage makeing for years, but finaly got serious and got a masterbuilt smoker. Its real nice and easy to use and finaly big enough to realy get serious with. Im a big duck and goose hunter, hunt deer for meat but it bores me to hunt them. So i smoke alot of wild game as well.

Welcome to smf PMK. Been hunting deer for years. Can't say I've ever been bored. Guess when that day comes that's the day I will quit.
 
Welcome aboard. I was a NYer, except my folks kidnapped me at 3 months old and transplanted me to Florida.

Guess, i can't complain too much. Corning was my area for that short a time.
Planning my first venison roast right now. I marinaded it over night, plan on cutting some slits in the meat and putting some garlic and bacon pieces around. Maybe some strips of bacon over the top. Hope that works.
 
Glad to have you as part of the SMF. Plenty of hunters around here, so enjoy the company.
 
PK welcome to SMF glad you joined us. Congrats on the new smoker. I too am a deer hunter and while I still harvest deer I seem to get far more enjoyment out of the deer management and habitat improvement end of it anymore. Have fun and happy smoking

welcome to the forum PMK, have to agree with Daboys, i been freezing cold, i been wet to the bone, hunted in blizzards, but bored??? never happened! theres lotsa hunters here so keep watch and you will see lotsa cool stuff to do with venison. hope you share some of your recipies with us and cant wait to see some qview from you!!!
 
Welcome PMK. LOL about the deer hunting. I will be waiting to see some smoked duck. Sorry but duck isn't my fav. Please teach us how to prepare it so its edible.

Goose has been a challange, as I get alot of them. Here the early season is 8 a person, there are 4 of us that hunt, and my buddy dosn't take hardly any (1 out of 50 maby) so i get the rest, so I needed something i can use it in. The answer has been sausage, goose works unbelievably well in sausage, especialy hot italian. I have not tryed to many kinds, of sausage only that one, and some ground and spiced terriaki jerkey. It works real well and i can use a bunch of it. Its very lean takes flavors on real well has little flavor of its own, mind you we only breast them out so we are not talking about any thing but meat. Im using less than 1/3 pork to the recipies and its working out good.
