I've noticed that the Spicewine thermometer seems to be the pick of choice for quite a few UDS builders, but I came across this turkey fryer thermo and was wondering if it would do the job as well?

It peaked my interest because of the 12 inch stem whereas most usually range just 3-4 inches. Also, in general how much of a difference is there between the actual temp of the cooking grate and the temp shown on the side mounted thermometer?
