Insta cure

    Accidently used cure #2 instead of cure #1 for making venison sticks.  I will not be smoking but rather doing it in the oven at 170 degrees until internals reach 152.  Any problems or health issues with this?

    No problem, please make sure they all hit 152 F.

    Thanks.  I didn't know if there was some health issues, but if I make them in the oven i kind of thought there would not be a problem.  The meat was 60% venison and 40% pork.  I will make sure they get to 152 degrees

    As long as you cook it in low temperature you will be fine. Could be health issues if you were to high temperature cook it.

    bob, is this because of the nitrate conversion?

    Yes it is required for two reasons, nitrate to nitrite to NOx conversion.  And low temp to prevent the development of nitrosanimes.

    I cooked for 3 hours at 170 with the oven door cracked.  Is this enough time for cooking?

     We don't cook by time, we estimate time and cook by what the thermometer says the internal temperature is.... so did the center hit 152 F?

    Yes it did.  About 3 hours and I checked with a meat thermometer and temp varied between 154 and 158 in various hot sticks.
