Injection ingredients?

Pineapple juice, and what ever else sounds good, rub, worchester,whiskey.
Avoid useing anything to acidic.
 
I would suggest taking whatever you're gonna spritz with and mix in some of your rub. That way those flavors will be deep into the meat.

That's playing it "safe" to make sure that the flavors you're already using don't fight with the flavors in the injection.

Once you see how you like injecting, you can experiment with other flavors.

I too like to inject my pork butts with a simple mixture of pineapple juice (and spices).
 
SHHHHH, that was a speed secret i let out. I really like the flavor that pinapple juice gives, and Alton brown say it helps tenderize the meat, i was doing that long before i got food network even.
Peach juice/Nector is good also, and there is still a rumer of me injecting a butt with Margirta once at a comp.
I think i have seen just about every thing liquid used , the wildest 1 was AMP energy drink, the guy doing it said he used it over Red Bull, cuz he didnt want his butt to grow wings.
 
I don't inject my pork butts, but,(guess thats a double butt) the basic seasonins could be used, onion powder, garlic powder, cumin, cajun seasonin, greek seasonin, sumtin like good seasons italian dressin, fer liquids, apple juice, orange juice, or as others have said pineapple juice, a bit a whiskey won't hurt either. Ya could also melt a bit a butter an inject that too. Don't go to heavy, say a cup an half a water with bout 2 tablespoons a melted butter in.

I would start out easy on the injectin, work up ta a recipe ya like, it could get over powerin if ya use to much to soon. My feelins are, we are tryin ta inhance the flavor a the meat with some seasonin an the smoke, seasonin could over power a lighter smoke, thus the need ta experiment. Yall try some different ones an keep us posted on how it's a workin out fer ya. Should be a fun experiment as yall get ta eat the results! Good luck!
 
smokindummy - I've smoked quite a few butts and haven't injected any of them yet. With the suggestions you're thread has provided, I may inject my next butt too!! Nice thread ...
 
heard the deal about pineapple juice tenderizing meat somewhere. pork and pineapple go great together...
 
1 stick unsalted butter

12 oz. of your favorite beer

1tsp cayenne

1tsp garlic powder

1tsp paprika

1tsp salt

take and melt butter over medium heat, add your beer and spices and bring just to simmering, take off heat and you can throw it in the fridge to cool it off before injecting.

Apple juice and rum for me. I use the same to mop my butt as it cooks.


a little for the butt, a little for me, a little more for me...........
 
Do you guys shoot up every time? Today is the first time I am injecting my butts. I went simple made some extra rub last night and had it steeping in some apple juice before injecting.
 
Never tried butts before but I always inject my hams. I use pineapple juice,honey , and brown sugar. I heat it up in a pot to disolve the brown sugar and let it cool, then fill up the ham til it seeps out every where. If you do this make sure the ham is in an oven bag so when it hits a vein it doesn't spray all over your house!!!!!!!!!!!!!
 
that's the greatest idea i've heard all day! i was going to try that same mop on my butt too. has anyone tried in spare ribs yet? just curious since i'm going to do a couple of butts and spares next weekend.
 
I know this is an old thread but how much apple juice and how much rum?

I'm thinking spiced rum and apple cider.
 
another question, how many injections do you usually use? do you space them out say every 3 or 4 inches, two in the side, one in the butt? Whatayado?
