Hi everyone,
I caught the smoke bug recently after a trip to Austin Texas. I had Aaron Franklins fatty brisket. All I can say is that it was meat candy. Since I live in MA I'm too far from good Q so I figured I'd make my own.
I just bought a MES 40 Bluetooth and plan to build a mailbox mod with the amazn. I lurked in this forum for a few weeks and decided to go with that smoker combo as it seems to be popular with many of you fine folks. So I thank you all for the great insight and I look forward to learning more from you and maybe contributing some knowledge once I figure out what the heck I'm doing.

The Amazen products are simply second to none and their customer service is absolutely outstanding. I recently purchased a MES 40 and went in and spoke with Todd over at Amazen as i was debating the mailbox mod. You do not need to do the mailbox mod for his products to work in the MES. I used the 5x8 pellet tray in mine last weekend with no issues what so ever. I do not doubt that the mailbox mod does in fact do what it is suppose to do and is helpful when cold smoking as to not introduce heat. Just know that the mailbox mod is not required to make the Amazen products do what they were designed to do. Enjoy your new addiction!
