Howdy All:

Been smok'en on a backyard Kingsford and about a year ago bought a custom trailer unit.  I've competed on a team many years ago and wanted to get back into it.  My son and I are the team and have competed in about 5 cookoffs here in Texas.  I notice there are teams that consistently win and would like to improve my performance.  The key word here is consistency.  I will be seeking information on obtaining flavor and tenderness in chicken, spare ribs and brisket.  I cook on Mesquite and some oak.  My team name is: Gulf Coast Gourmets
 
Hello and Welcome from Gary here in East Texas, You probably already know this since you compete, but my friends that do the competitions do one kind of Q for family and friends and another for the competitions. What they tell me is try and find out what the judges are looking for.  I've seen that over and over. some of the best BBQ I ever tasted didn't even place because it wasn't what the judges were looking for.
