I finally back from Mississippi. I graduated and I came back to North Dakota! I put a pork shoulder on at 4 am and I cant wait until supper tonight! Just to give some you who know me an update. The Air Force has seen fit to relocate me to Korea in March. That's not going to be much fun having to be away from the Mrs. & son. The light at the end of the tunnel is this...my assignment after that is to Alaska!!!

We move to ND from AK 7 years ago and by some great miracle, we are going back!!!

Thanks all!

The pork is coming along a little quicker than I thought. In 5 hours it's gone up 100 degrees. I was hoping to be done about 4pm, but it might be an early supper.

if it gets done early just wrap it in foil, then wrap it in heavy towels then into a cooler. it will not only rest but it will stay hot for hours. I have keep them in a cooler for up to 7 hours and still be at 175 internal temp
 
The plan to put it in a cooler for a couple of hours. I have never gone as long as 7 hours before. I may have to give it a go!
