Hello. My name is Jim and Im from Central Illinois where I live with my wife, daughter and 2 pitbulls. Got a Char-Broil offset smoker for christmas and am completely new to the whole thing. Ive used it once in the days since christmas and really want to learn more.

Welcome aboard Jim!  Congrats on that new Char-Broil!  You'll find that this is a great place to share ideas on smoking, grilling, etc.  There are plenty of folks here who genuinely enjoy helping one another.  Looking forward to your input, and just ask when you need anything...someone here will surely have the answer.
