But it was just a back yard party contest. All for fun & charity. Two groups, the Home Brewer's club & The Pepper Lovers club got together for a brew & BBQ contest & party. They brought the beer & we brought the BBQ & sides. There were 10 pulled pork entries. This was my second time competing in my group which we do once a month with different themes. I was able to get a good idea of what they liked last time since I just joined them & they like some heat so I brought it but didn't try to kill anyone. Also I didn't have much prep time for the last contest.
So this time I had a chance to make my own chipotle sauce which I used in this "Smokey Chipotle Sauce". Its a lil Carolina tang & some southwestern heat combo finishing sauce for pulled pork. I doubled the chipotle sauce & cut the ketchup. I also made the ketchup.
Spicy Rub
1/4 cup Dark Brown Sugar
1 cup Paprika
1/2 cup Celery Salt
2 Tbsps. Granulated Garlic
1/2 Tbsp. Mustard Powder
1/2 Tbsp. White Pepper
1 tsp. Cayenne Pepper
2 tsps. Ground Thyme
1/2 tsp. Salt
Chipotle Barbecue Sauce
1 cup Apple Cider Vinegar
1 1/4 cup Ketchup
1/4 cup chipotle sauce
3 Tbsp. Brown Sugar
1/4 tsp. Salt
2 Tbsps. Yellow Mustard
*not sure where I found these recipes but they work for me
I made 3 & had to pull them off the smoker at 195 which I wasn't thrilled about but I just wrapped em & put em in a cooler with towels & 6 heated fire bricks lol!. Fortunately the contest got started late which seems normal protocol with the club. The butts got to rest 1.5 hours & I started pulling 10 min before contest started. I don't sauce mine so I did not want it to dry out in a crock pot. I just warmed the dutch oven & stuck it in insulated bag.

Some nice sides & there was chips/dips/salsas outside
My prize......a pig cookie jar rofl! Gonna put flour in it & stick that next to the stove for sausage gravy.
Sorry my camera sucks....new one is ordered. Here we are getting together $50 for my man Justin to eat 1/4 of a ghost pepper. I stopped by his house this morning with snow cones. We asked wth are you bringing me snow cones for? I told him he will need em to wipe his butt in the near future.
