leftover butt...

1 can refried beans
2 lbs finely shredded or chopped smoked pork butt
1 lb shredded cheddar or mexi blend cheese
1 lb shredded pepperjack cheese
1 can mild or regular rotel tomatoes
1/4 diced onion'
4 cloves smoked & mashed or finely diced garlic
1 4 oz can mushrooms (diced or chopped)
1/2 lime squeezed over the top of mixture


mix all ingredients into a bowl & spread over tortillas(1/2-3/4" thick) & add another on top
cook over med. heat until heated(well browned) or cheese is melted
slice in 1/4s w/ a pizza cutter
add refrieds on the side or paste a layer on the tortillas
spanish rice on the side
w/
frest lettuce,tomatoes,guacamole,sour cream,
drizzle lime drippings over the guac. fora better taste
have a corona or tecate or dos xx's & smile.

got 1- lemmme shoot it to u soon as i find it. basically- stir cook the rice w/ 1/2 water 1/2 pork or beef boulliabase, add rotels,cilantro,comino,lime- cover & steam for 45- done... oh yeah... add some cabrito meat or barbacoa meat & 1 splash mexican beer.- lime splash before serving & parsley or cilantro garnish on top.
