i think it makes a big difference wrapping your ribs ovenight

because i tried both ways and the best way was wrapping overnight. i had the same cook time and cook temps on both sets and the wrapped ribs shrunk more the unwrapped ones. i took them both out at the same temps too. but the both tasted great the wrapped ones were more off the bone then the other ones just my opinion.
 
every time i have tried that smoke........the rub turns to sauce.......makes a mess........so anymore.......we wait till just before i put em on.........

tried wrapping 3 different smokes of ribs..........and the rub turns to, like a said, a sauce.......unwrapping is SUCH a headache
 
I use jeffs rub on every cut of meat. except chicken. I always rub and wrap the day before. IT MAKES ALL THE DIFFERENCE!!!!!!!!!!!
It smells so good when un wrap it you almost want to bite into then.

Like WD said it turns sauce! O yea d88de that's a good thing!
 
this is truly OPPIONIN, and i think it gives a "hammy" texture and has no benefit, but i have some practices that others think my be a waste
 
I too am a fan of the overnight rub rest, for ribs, chuck, and butts!
