I started smoking some chicken, the wife finished it for me...

On Monday night I put 4 BIG chicken breasts into some of Pop's brine and let them go until last night.  I got home around 5, started the smoker, took the breasts out of the brine and into some fresh water, and chilled for about 1/2 an hour while the meat desalinated a bit.

Took the breasts out of the fresh water soak, dried them off, rubbed them, and put them into the smoker.


That was the LAST time I saw these breasts...  My cell phone rang and I had to go back in to work.  I was going to take the meat out of the smoker, but my bride said she could take them out when my alarm went off.  (I had the Tappecue going and the alarm goes off on the iPad).  I reluctantly said ok and left my loaded smoker going!

She called me about 1.5 hours later and said that the breasts were done and she had pulled them.  I reminded her to take some pictures.  These aren't the best pics, but the chicken was AWESOME according to her.  When I got home I was too tired to eat.  I brought one for lunch today though.


 
Thanks, but I can't take too much credit for this one.  I just prepped it and stuck it in the MES.  The wife spritzed it once and then pulled it at 160.  I just nuked a piece of it for lunch and it was nice and juicy.
