I throw in 1 pound of brisket in my beans and I need to make a batch of beans next week and I only had about 2 ounces of brisket in the freezer, so I had to make a brisket. Did something I've never done before, I separated the flat & point before cooking. I forgot how long the flat was cooking for but when I took it out I cubed up the point. I've never had luck making burnt ends. So this time I added more rub (equal parts black peppper, salt & paprika) and mixed it all up and threw it back in the smoker. The last hour I added some BBQ sauce to it, total cook time was 12.5 hours and by far my best attempt at burnt ends.

I know I know....

But I just didn't take any pictures. I haven't been photographing too much of my work lately, I should start doing it again.
