Just wanted to say hi since I'm new to this forum. I haven't been smoking for to long, but my wife pitched in half for my smoker about a month ago for a combined father's day/birthday present and I've been cooking 2-3 times a week. I'm originally from Dallas but move around a lot because of the Navy. So far I've smoked just about everything I can think of, from chili to brisket and fish. I'm gonna start experimenting with wrapping everything in bacon to see how well that turns out, starting with a brisket tomorrow. Well I'll see all of you around.
