Pellet cookers do have problems creating smokering so cooking on the smoke setting for the first 2 to 3 hours is a good plan. After that 3 hour period move your temp setting up to the 225 to 250 range to continue the cook.

One concern cooking a brisket at 190 for 24 hours chance are this brisket will be on the dry side.

My 070 has the digital switch which is graduated from smoke, 1 hash mark then 225, one hash mark then 275 and so on.

Sorry for the delay in answering but you know how it is when work gets in the way. The reason I had a single on was a room issue. I use a Traeger 070 and the 14lb brisket was all that would fit on this smoke. But here is the wierd part, last nights brisket, the one that inspired this post, has turned out the best so far. I now have the last 2 on and they just reached 170 so I am foiling now for the last time. Thank you all for your help. This is a super group.
