I have read the temp guidelines about the danger zone.

A fella at work claims that he smoked a turkey for 12 hours. I am wandering if this is possible?

So if you get the turkey thru the danger zone in the 4 hour time frame, can you smoke it on low heat for 6 to 8 hours longer?

Sure it's possible a 20 lb bird could go that long.
 
I suppose, but why?  I've never had a turkey take more than about 5 hours (nearly a 20 lb bird).  Nice smoke ring, great flavor, moist.  Anything more is probably beyond necessary and risks drying out the bird IMHO.

Sure you can smoke a turkey for 12 hours it's easy. Just leave the turkey in the smoker for 12 hours. Now eating it might be alittle hard. I think you should ask your buddy if he was goning to eat that turkey or was he gonna make some shoes out of it.
