So after all the reading I've been doing about the pork candy, I had to try some.  I raided the freezer and found some spicy sausage, sliced it up & wrapped it in bacon!  Mixed up some brown sugar & cajun seasoning, and here we are..

I rigged up a wood chip tray, but the picture didn't turn out.

So, onto the smoker they go!

After they sat for a bit, the flavor turned a little salty.  I went back and looked at the seasoning mix I added to the brown sugar and guess what the first ingredient was?  D'oh!  Next time I'll do them a little differently, but there will be a next time!

Now thoses things are the talk of the last party I took them to. They had some good competition like pome ABT's, BBq Sushi, moink balls, and some smoked shrimps. 
 
I have some rather large poblanos in the fridge, and I think there are some salad shrimp in the freezer, might need to make some hybrid ABTs soon.

I'm also thinking a smoked meatloaf is on the horizon!

BBQ Sushi?  I need more info on this!  Oh God, I might have a problem here, LOL!
