"Lecso" pronounced La-cho.
Just like any recipe, there are many variations and combinations.
This is the way I make this tasty dish, We enjoy this for a great lunch using fresh veggies from our garden.
1- One pound of bacon-cut into 1/2 inch pieces
2- 3-4 large fresh tomatoes- cut into 1/4's
3- 1 fresh green bell pepper - clean seeds out, sliced thin
4- 1 fresh red bell pepper- clean seeds out, sliced thin
5- fresh Hungarian paprika
6- salt
7- black pepper
8- hot pepper of your choice (optional)
9- garlic optional

Cook bacon in frying pan on medium heat, reduce heat to low and add in tomatoes. once the tomatoes are almost reduced to just the juice, add in the rest of the veggies. Salt and black pepper to taste. Simmer til desired texture of the peppers. Shake on some fresh Hungarian paprika and simmer for another 5 minutes.
Done. You can serve it with fresh rye bread on the side. Sometimes I serve it over rice.
