I had an pretty busy weekend.

It started with smoked jalapeno cheese puffs, then Velveeta, then 30 lbs of sausage!

The sausage was awesome, Dutch Pepper Sausage (from a pre-blended mix) sweet Italian (same thing, but I added a boatload of dried pepper flakes!), an experiment with peppers and onions, and finally gyulai kolbasz.

The gyulai kolbasz was what I really wanted to do...

I ran out of casings, so i bulked the rest up on foil and cold smoked it for 6 hours (yeah, so much for the recipe), with a mix of oak and hickory pellets using the AMNPS.

next weekend, I'll be cooking some up with potato pancakes like the ones in the picture...

it's a beautiful thing.

That sausage sure looks good, man you was not sitting still that's for sure, but I'll bet it was well worth all the work, much better tasting then you could buy. 
 
That's a pretty big batch there! I might have to try that Kolbasz recipe as a base next time, sounds good. I browsed that website for a half day once. A lot of info on there.

Don't you just hate running out of casings!!!!

Did you say you smoked Velveeta ?  ha I haven't had that forever (regular that is, never had smoked). How was the smoked velveeta?
 
Smoked Cheese Puffs? That's different...I saw an episode of DDD where the owner of the Q joint featured, portioned and wrapped his Sausage in Dry Corn Husks, like those used for Tamali's...These would be a great nonperishable backup to Casings...JJ
 
The smoked Velveeta is in the cold smoking cheese threads, and the cheese puffs is in the cold smoking other threads.
