Background information.
I had constructed my charcoal basket for my UDS based off of the 20/20 thread found here (great idea btw) http://www.smokingmeatforums.com/for...ad.php?t=89796
I used a larger piece of expanded metal after calculating the volumes of several UDS charcoal baskets found here and other sites. I just was not getting the consistent temps and definitely not getting the length of burn reported by all other UDS users with this square design.
Solution.
I did not know Badfrog, we had swapped PMs in attempts to find a source of barrels locally to us, and other UDS build questions. On learning of my less than stellar results offered his help. He has a sweet set up in a beautiful spot of Tennessee and constructed this work of art.
I have not used the 'diffuser' plate / lid yet, only have one smoke in since the upgrade. HUGE difference in performance, UDS got to stable temp much faster than with previous square design, and more importantly once temp was dialed in at ~235* locked on with no adjustments.
I was a very happy camper, instead of wetting my pants in excitement drank a beer or two and added some meat.
Bird legs brined in Travco's recipe, baby backs wrapped couple days in a new rub I put together.
Time to wrap up the ribs (use 2:2:1 method, varies depending on how ribs feel after initial 2 hours)
OK, only one poor money shot (neighbor wandered over that had been giving me some SERIOUS grief over the UDS idea... we destroyed the majority of the legs which were washed done by previously mentioned beersssssssss

First observation was a definite taste difference from fat / juices dropping on coals (I have only smoked on electric with drip pan before), liked it. I look forward to using diffuser plate to see differences.
