Hello Davem here from Oahu Hawaii . I am in the fish business so I will be looking for any helpful info on smoking seafood. My first attempt was to smoke striped marlin. It came our ok only I think the fire got too hot and I smoked but mostly cooked the fish. Like I say it turned out ok but how does one keep the heat down?

Spent 54 weeks on Oahu in '69-'70.

Caught a 241 lb, 9' 4 1/2" Marlin off Fishermans' Wharf.

Didn't have a smoker at the time!!!

You can keep your heat down by getting an AMNPS. You'll read a lot about that on this forum.
